This was originally my grandmother's recipe for plum cake. It is really the old Gerber Baby Food cake from many years ago but I think that my grandmother added some bits. My mother's birthday this year was sort of a thrown together brief celebration. She got out of the hospital on her 66th birthday, I had run to the store to pick up some bread and the only cake I found that I thought she would like was a miniature loaf of banana walnut bread. The texture reminded me of my grandmother's plum cake and so I thought I would try using banana flavored baby food instead of plum baby food. BTW, you can't buy plum baby food any more, Gerder marketing discontinued it - the only thing you can get is plum with apple and it does not taste the same.


Banana Walnut Bread Cake
2 cups Self Rising Flour
2 cups Sugar
2 large eggs
1 cup Crisco oil (or vegetable oil)
2 large jars banana baby food
1 teaspoon cinnamon
½ teaspoon nutmeg
1 teaspoon vanilla
1c chopped walnuts (or you could use pecans)
1 banana sliced thinly

Mix ingredients thoroughly.

Pour into greased Bundt pan.

Bake at 350 for 40 to 45 minutes.

Remove from oven, cool for approximately 15 minutes before removing from pan.


The plum cake recipe was identical except that plum baby food was used.
